Food recall notice: Fratelli Beretta Charcuterie with Coppa recalled due to potential Salmonella

The Washington State Department of Health (DOH) has shared a recall expansion notice for coppa charcuterie meat products. The recall was initially linked to products sold at Sam's Club. Later in January, products sold through Costco were linked to illnesses in Washington and the producer initiated a market withdrawal. As from DOH's update in January, Washington has 6 lab-confirmed cases with the last onset in December.

After continued investigation, The U.S. Department of Agriculture (USDA) has identified a potential processing error with the coppa product. Coppa is a shelf-stable, salt-cured product that relies on a multi-hurdle approach to achieve lethality and shelf-stability. Traditionally, the products rely on salt-curing and drying, but may also use a low temperature heat step. We are unsure of the processing error identified by USDA, but expect to hear additional details after their investigation is complete.

Due to the shelf-life of the product and the wide variety of brands recently recalled, public health believes recalled products are potentially still available for service. Food service retailers, such as delis, groceries, charcuterie board producers, and smaller establishments are advised to ensure they have removed all recalled products from sale. Public health staff also will work to share this information and check for recalled products during site inspections.
