Unpermitted Foodservice Notifications
he primary goal of the Snohomish County Health Department (SCHD) food safety program is to protect the health of its residents by regulating foodservice operations in the county. To prevent the risk of foodborne illnesses to the public, active permitting and inspections help to ensure that correct food handling practices are implemented and are being maintained. All foodservice operations preparing and selling food to the public must have a valid and current permit with the SCHD food safety program. Foodservice operators are required to have their SCHD food service operating permit displayed for customer viewing. Customers can request to see the permit if one is not visible.
A Cease-and-Desist occurs when an unpermitted foodservice operation is found preparing and selling food to the public. Unsafe food handling is often observed with these operations. Upon the Cease-and-Desist closure, the food safety team provides the unpermitted food business with educational information on how to obtain a valid permit along with written documentation requiring the operation to remain closed until the required permit has been obtained.
